PEAS FRIED RICE

This entry goes to Veena- Veg junction for HLI  peas.and also goes to lunch box ideas hosted by kalyani 
INGREDIENTS:
Green peas(fresh)-2cups
Raw rice(basmati optional)-1cup
Bay leaf-1
Cumin seeds-1tsp
Cloves-1/2tsp
Cinnamon-small piece
Ghee-2tbsp
cashewnuts-2tsp
Raisins-1tsp
Greenchillies-2
ginger paste-1tsp
Coconut milk-2cups
salt to taste

METHOD:
Take a kadai add the ghee,fry all the ingredients from bayleaf to ginger paste for a minute.
Add the peas to it and fry for 2minutes.
Add the washed rice to this and fry for 1minute.
Transfer intoa vessel and add coconut milk and 1/2 cup water,add  the required salt.
Pressure cook for just 2whistles.
Tasty fried rice is ready and mostly children love this compared to sambhar and other items.
Goes well with some curd or raitha.



INSTANT OATSAND RAGI IDLY

This entry goes to Blog hop wednesday-12 hosted by Radhika I am very happy to complete the two versions of it with out any problem or break.Now I intend to join her version2.Hope it goes on with out any trouble.This time i am paired withAyeesha-Taste of pearl city.I went through her blog and tried many dishes .All turned out very well.Today I tried instant oats and ragi idly for breakfast.It is very healthy and soft.
INGREDIENTS:
Rawa-3/4cup
Ragi flour-1/4cup
Oats-3/4cup
Curd-1/2cup
Butter milk-1cup
Salt to taste
For seasoning
Mustard-1tsp
Urad dhall1tsp
chana dhall-1tsp
Ground nuts:2tsp
Coriander-1tsp
Green chillies (chopped) finely-1tsp
Ginger paste -1tsp
Curry leaves a few
Oil-2tsp
Eno salt-1tsp

METHOD:
Take a kadai and add the oil,add all the seasoning and to this add the rawa,oats.
Fry for one minute,add the ragi flour.
Now mix this with curd and buttermilk,salt to get a idly batter consistency.
Add the Eno salt.
Pour it on a idly mould and steam it for 10 minutes
Soft and fluffy idlies are ready to serve with chutney or sambhar.

WALNUT COOKIES

This is the Blog hop wednesday -11 hosted by Radhika and it was ver y thrilling to wait for the wednesday to go through many new dishes.Thanks to radhika for hosting it.This time I am paired with veena-vegjuction.No words to describe about the dishes,I have tiried many of her dishes and all turned out tobe mouth watering.Today i went in for Walnut cookies instead of her Almond cookies.I followed her recipe exactly the same except for almond I substituted Walnuts
INGREDIENTS:
Whole wheat flour-1cup
Sugar-1/2cup
Butter-1/2cup
Salt 1/4tsp
Powdered walnuts-1/4cup
cardamom-1tsp
Milk-2tbsp

METHOD:
Mix all the dry ingredients.
To this add the butter and make it to a soft dough.
Some milk weas also needed.
Make even sized balls and I baked it in a convection mode -Microwave oven.
Bake it for25 to 30 minutes till it is crispy.
Super and healthy cookies are ready!!!!!.

PALAK-THULSI CHAWAL

Today is "Adi-perukku".On this day we usually make different types of rice.Radhika has announced  "Blog hop Wednesday",She has paired us with each blogger one one day.Before starting this I must appreciate first Radhika for her beautiful blog-http://ticklingpalates.blogspot.com/,and she had paired me with  Priya,http://mharorajasthanrecipes.blogspot.com who has a wonderful blog announcing many events etc.I chose Palak-thulsi chawal.In addition to this I made Mango rice,curd  rice and Jaggery rice.Since it was a festival day for us I did not use onion and garlic.
Here goes the recipe:
INGREDIENTS:
Rice-1cup
Palak (Chopped )-2cups
Thulsi (I used dried one)-1/2 cup
Tomato-1/2 cup
Turmeric powder-1tsp
Red chilly powder-1tsp
Cumin powder-1tsp
Coriander powder-1tsp
salt to taste
Green chillies-2
Ginger paste 1tsp
Mustard seeds-1tsp
Cumin seeds-1tsp
oil-2tsp

METHOD:
Cook the rice in a pressure cooker or rice cooker .
In a kadai add oil,mustard,and cumin seeds and let it splutter.
Add the tomato, green chilly and ginger , fry till all the water evaporates.
Now add the chilly powder,cumin powder,coriander powder turmeric powder and salt.
Palak and thulsi are added to this mixture and cook it till it is done.
Mix the cooked rice with this.
Aromatic palak,thulsi rice is ready!!!!!

BEETROOT RAITHA

This is an entry to Radhika's Blog hop wednesday-10 Edition2.This week I am paired with Sara's kitchen.Her blog is awesome and i have tried many recipes from her blog.Toda y I tried Beet root raitha which was liked by evryone at home for fried rice.
INGREDIENTS:
Beet root-1(cut into small pieces)
Red chilly powder-1tsp
Salt to taste
Curd-11/2 cup
Peanuts-1/4cup(roasted and powdered coarsely)
To Temper
Mustard-1tsp
Oil -1tsp
Coriander to garnish


METHOD
Keep the beetroot in a pressure cookerand cook till one whistle.
Mash it slightly with a masher.
Take the oil in a kadai add the oil, mustard,wait till it splutters.
Add the beetroot,chilly powder, peanuts and salt to it.
Add the curd and switch off the gas.
Garnish it with coriander.
Healthy,colourful raitha is ready!!!!Tasted very well with fried rice.:

CARROT_MASALA ROTI

This is the 9th week of BLOG HOP WEDNESDAY-9Edition2 hosted by Radhika.This time I am paired with Priya vasu ,Whose  BlogI have already visited many times for her awesome recipes and this time I chose Carrotmasala roti. 
INGREDIENTS:
Wheat flour-2cups
Salt to taste
Water for kneading
Carrot -1 shredded
Kasuri Methi leaves-1tbsp
Chilli powder-2tsp
Turmeric powder-1/2tsp
Oil-2tsp

METHOD:
Mix all the ingredients and make a soft dough
Leave it for 30 minutes.
Roll out in to rotis and cook it on a tawa on both sides
Soft and delicious carrot rotis are ready!!!!
Serve it with some raita or some vegetable etc

MAWA DRY FRUIT BURFI

INGREDIENTS:
Mawa-1cup
Almond(powdered)-1/2cup
Cashew(powdered)-1/2cup
Fig-1/4cup(Cut finely)
Sugar-21/4cup
Water -1cup
Cardamom-1tsp
Ghee -2tsp(to grease the plate)
METHOD:
Take the mawa,cashew,almond and fig ina kadai and fry it in onetsp of ghee for two minutes
Transfer it in a bowl and add sugar ,water. in the same kadai and make it one string consistency.
Add the mawa mixthure and in a medium flame ,heat it till it leaves the sides of the kadai.
You may test it by putting the mixture in a small plate,and seeing whether it becomes little hard when it is cooled.
Transfer it on a greased plate and cut it in to diamond shape.
Lovely mawa dryfruit burfi is ready.

TOMATO BESAN PANCAKE

This entry goes to BLOG HOP WEDNESDAY-8 Edition2 hosted by Radhika.There are no words left for appreciating her.Her blog is wonderful one with   beautiful clicks,awesome recipes and so onThis time I am paired with NUPUR.-UK rasoi with lot of mouth watering recipes and colourful one.I chose Besan dosa with some alteration instead of soya flour,I used rice flour little.
INGREDIENTS:
Besan-2cups
Rice flour-1/4cup
Tomato-3
Green chillies-2
Ginger paste-1/2tsp
Chilly powder-1/2tsp
Hing little
Onion-1
Cumin seeds-1tsp
Water enough
Salt to taste

METHOD:
Take the tomatoes,greenchilly,redchillypowder,salt in a mixie and grind it to a fine paste.
Add the flour and cumin seeds to this,making like a dosa battter with water.
Chop the onions finely and add it to the mixture
Spread it on a dosa tawa with a dash of butter and cook it on a low flame for 2-3 minutes.
Yummy besan pancakes a  ready!!!

DIWALI SWEETS AND SAVORIES_ALMOND KATLI,BADUSHAH,THENGUYAL

Happy Diwali to all
ALMONDKATLI
INGRIEDIENTS:
Almondspowdered-2cups
Milk powder-1cup
Sugarpowdered-11/2cups
Milk-1/4cup



METHOD:
Mix all  in a microsafe vessel and cook it on micro mode for 5minutes.
When the mixture turns out like a ball cool it well
Spread it on a greased thali.
Super Almond katlis are ready.
BADUSHAH
INGREDIENTS:
Maida-1cup
Salt  a pinch
Curd-2tbsp
Soda-1/4 tsp
Water to knead
Oil to fry
Sugar-1cup
Water for making sugarsyrup-1/4cup
Cardamom-1tsp
lemon juice-1/4tsp

METHOD:
Mix all the ingredients from  maida to water like soft dough.
Leave it for one hour
Take a small ball and press it in the middle like a peda.
Fry in hot oil but in a slow fire.
Prepare the sugar syrup till it is a string consistency
Add the cardamom powder and lemon.Switch off the stove.
Dip the hot badushah for three minutes and dry it on a plate before storing.
Wonderful badushahs are ready.
THENGUYAL
INGREDIENTS:
Rice flour-2cups
Urad flour-1/2cup (If it isstore bought,fry till it is slightly warm)
Cumin seeds-2tsp
Hing a little
Ghee-2tsp
Salt to taste
Water to knead
Oil to fry

METHOD:
Make a soft dough with rice flour,urad flour,cumin salt ,ghee and  water.
Squeeze out through a thenguyal press.
fry in hot oil till it is crisp.
Store it in air tight containers.

BEANS PARUPPU-USILI CURRY

This is the Blog hop wednesday-7 hosted by Radhika.I am very happy to take part in all the seven weeks and hats off to Radhika for sending everytime a reminder etc....This time I am paired with Laxmi.Her blog is awesome and I picked Beans Parupu usili with a slight variation.
INGREDIENTS:
Beans(cut)-2cups
Chana dal-1/2 cup
Redchillies-4
Curry leaves-few
Hing a little
Salt to taste
Mustard-1tsp
Oil-2tsp

METHOD:
Boil the beans till it is tender.
Soak the dal for one hour and grind with chillies,curry leaves,hing and salt to a coarse paste.
Steam this for 10 minutes
Take  akadai,pour the oil and mustard.Let it splutter,add the chana dal mixture and the beans.
Keep it on a slow fire for 10 minutes.
Healthy and tasty curry is ready to have with sambar rice or rasam.

LAVANG_LATIKA

I tried this sweet from Rahdika's blog which was hosted by her for Kalyani.The sweet turned out very good and every body liked it.
INGERDIENTS:
 For the outer cover:
Maida-1cup
Ghee-2tbsp
Salt a pinch
Water to knead
Oil to fry
Cloves-8-10
For filling
Koya-1cup
Powdered sugar-1/2 cup
Almonds-8
Cashews-8
Cardamom powder-1/2tsp
For the coating:
Sugar-3/4cup
Water-1/2cup
Cardamom-1/2tsp

METHOD:
Knead the maida,salt and ghee  well.Then add water and knead it to a soft dough.
Leave it for half an hour.
Add the koya,powdered sugar,Coarsely powdered almonds,cashews,and cardamom together.
Prepare the sugar syrup to one string consistency.
Roll the dough in to small poories,Keep one tsp of stuffing,fold it likeboth sides and then the remaining two sides like a samosa and keep the clove.
Fry it in hot oil in a slow fire.
Dip it in sugar syrup and let it dry.
Super Swee is ready to serve!!!!

CAPSICUM CHUTNEY

Thank you Radhika for taking so much of pain in organising this blog hop wednesday-6 and always reminding us before the event.This time I am paired with  Jabeen's corner..All the recipes are mouth watering and I selected Capsicum chutney for the event.Here goes the recipe:
INGREDIENTS:
Capsicum-1
Onion-1
Urad dal-2tsp
Redchillies-3
Greenchilly-1
Hing little
Tamrind paste-1/4tsp
Salt to taste
For tempering:
Mustard-1tsp
Urad dal-1/2 tsp
Curry leaves few
Oil-1tsp


METHOD:
Take a kadai,with 1/2 tsp of oil fry the dal,followed by onion,and capasicum.
Cool the mixture,add tamrind paste,salt curry leaves hing and grind it to a smooth paste.
Now , with the remaining oil,splutter the mustard and urad dal,add it to the chutney.
Serve this aromatic and tasty chutney with dosa ,idly etc

TOMATO RASAM

This entry goes to Radhika's - Bloghop wednesday-5It is very interesting to take part in this event as we are paired with someone ,so we are forced to go through others blog where we learn many recipes,their presentation etc.
This week I am paired with Charishma.She has a wonderful blog,the nonvegetarians will enjoy more as there are many recipes.I chose Tomato rasam
INGREDIENTS:
Tamrind-(Iused paste)-1tsp
Tomato-1(chopped)
Rasampowder-(Coriander seeds,chanadal,pepper,cumin,redchilly)
Coriander for garnishing
Turmeric powder-1/2tsp
Hing-1/2tsp
Tur dal-1/4cup
For tempering
Mustard-1tsp
Ghee-1tsp

METHOD:
Boil the tur dal in  apressure cooker for 2whistles ,until the dal is very soft.
Take the tamrind paste,turmeric powder,hing,salt,tomatoand water in a vessel,boil it till the raw flavour disappears.
Rasampowder-Dry roast all the ingredients and powder it coarsely,add it to the rasam.
Take the ghee in a kadai add the mustard.After it splutters add it,Garnish with coriander.
Aromatic rasam is ready to eat with some curry and rice.

RAGI_OATS DOSA

I am happy to take part in this event Health is Wealth-hosted by Deepika sriraman Anand.
Oats as every one knows has lot of proteins,vitaminsand serves us as adietary food.
Ragi is full of protein,many minerals and gives us more strength and does not add to our fat.
Thus a dosa ,a combination of all these does not add fat but all other components.Oil is ued in a very minimum basis ,just to make dosa.
Cumin seeds added to it relieves all gas.
Exercise is very important like cycling which reduces lot of calories,and doing some pranayama will keep the body fit.
INGREDIENTS:
Rice flour-1cup
Ragi flour-1/2cup
Oats-1/4cup
Butter milk-1cup
Cumin seeds-1tsp
mustard seeds-1tsp
Curry leaves few
Salt to taste
Oil-2tsp

METHOD:
Mix rice flour,ragi and oats and buttermilk.
Take a small kadai,add 1/2tsp of oil add the mustard and cumin seeds,make it splutter.
Drop it in the batter,add the salt and curry leaves too..
Add more water and make it like a rawa dosa batter.
Spread it on a tawa like a rawa dosa.,add little oil,cook it on a medium flame .
Crispy and healthy dosa is ready!!!!Serve it with coconut chutney.

CAPSICUM STUFFED ROTI

Wheat flour-1cup
Oil-2tsp
Capsicum-1
Besan-2tsp
Garam masala-1tsp
Turmeric powder-1/2tsp
Salt as needed for both
Water for kneading
Cumin seeds -1tsp
spread the stuffing on this roti
Close with the other roti
Rotis with some boondi on it


METHOD:
Make a soft dough with wheat flour,salt and water.
Slice the capsicum into small pieces,
Take a kadai,add 1tsp of oil,add the cumin seeds.
When it splutters,add the capsicum,salt, turmeric powder,garam masala,fry for two minutes then add besan,fry for another 3minutes.
Roll out two rotis,Stuff the the capsicum in one and cover with the other.,by applying little water around the ends.
Cook it on a tawa with one tsp of oil
Tasty rotis  can be served with only curd. and some boondis on top

MILK KOZHAKHATTAI

INGREDIENTS:
Rice flour-1cup
Jaggery1/2cup
Milk-3cups
Cardamom-3
Water-1cup
Oil-1/2tsp
Salt a pinch
Coconut-1/4cup
Raisins-1tsp
METHOD:
Take the water in a kadai,add the oil,and salt,boil it.
Add the flour and make it a smooth dough.
Cool then make balls.
Boil the milk and drop the ballsin it and boil till the balls are well cooked.
Prepare a jaggery syrup by adding the jaggery and 1/2cup water,boil it till the raw smell of jaggery disappears.
Add this to the milk after cooling the milk slightly as it may curdle when it is boiling.
Add the cardamom powder and some coconut and raisins for garnishing.
Yummy sweet kozhakattais are ready.!!!!

RAVA_QUINOA IDLY

I am very happy to take part in this  Blog hop wednesday 4 hosted by Radhika -Tickling palates.This time I am paired with Ana mika.Her blog is just wonderful with lot of new recipes.I chose this idly as it served me as a breakfast with a slight variation of adding quinoa to it.
INGREDIENTS:
Rava-1cup
Quinoa-1/2cup
Curd-1/2cup
Water-1cup
Baking soda-1/2tsp
Salt to taste



TO TEMPER:
Mustard seeds-1tsp
Urad dal-1tsp
Groundnut-1tbsp
Pepper-1/2tsp
Cumin seeds-1/2tsp
Oil-3tsp
Curry leaves few
METHOD:
Take a kadai,add the oil, and all the ingredients under tempering.
Fry the rava in this oil and then add quinoa and fry for one minute.
Soak this in curd and water such that the batter is like an idly batter.
Leave it for 5 minutes and spread it on a idly mould and serve it with sambhar.

GUAVA -PACCHADI

INGREDIENTS:
Guava-2
Jaggery1/4 cup
Redchilly powder-1tsp
Asafotida-1/4tsp
Salt as reqd.


METHOD:
Cut the guava in to small pieces and microwave high for 6minutes till they are soft.
Strain it  through a  big colander so that all the seeds come out.
Add the rest of the ingredients and microwave it for 5 more minutes.
Super pachadi is ready!!!!

MICROWAVE MILK COCONUT BURFI

INGREDIENTS:
Coconut-1cup
Milk-powder-1/2cup
Sugar-1cup
Milk-4tbsp
Cardamom -3
Almonds for garnishing

METHOD:
Grind the coconut,sugar,cardamom with the milk.
Take a micro safe vessel,add the milk powder and the mixture,mix well
Heat it on high for first 5 minutes and then 5 more minutes till it is slightly dry.
Transfer it on a greased plate and place almonds for garnishing.
Make squares,cool it.
Yummy Burfi is ready.!!!!
