PEANUT COOKIES

I am very happy to take part in this cookie mela hosted by Srivalli.......
INGREDIENTS:
Peanuts-1/2cup(roasted and skin removed)
Wheat flour-1cup
Oil-1/4cup
Ghee-1tbsp
Sugar-1/2cup
Almond essence-few drops
Cinnamon powder -1/4tsp
Milk-very little
Soda-1/4tsp
Baking powder-1/2tsp


METHOD:
Take the flour,soda,baking powder and mix well,Add the nuts also.
Transfer this on a plate and mix the oil,ghee,,sugar,littlemilk  and whisk it well so that the sugar dissolves well
Mix all together and make balls and slightlty press it in the centre.
Arrange it on a baking tray and bake it on a convection mode 200 degrees for 30 minutes till it is crispy!!!!!

GREEN PEAS VADA

Today is the third day of Blogging marathon #17round 3....My theme is Kid's tiffin....So I tried some colourful one but once it is fried the colour vanished....
INGREDIENTS:
Fresh or soaked Green peas-1cup
Besan-nearly 1cup
Green chilly-1
Asafotida-1/4tsp
Curry leaves few
Fennel seeds-1tsp
Oil-to fry
Melted ghee-2tsp
Salt to taste

METHOD:
Grind the peas,green chilly,curryleaves to a coarse paste.
Add gram flour to make it a stiff dough.
Add salt and the fennel seeds.
Fry on a medium flame...The outer turns little dark in colour but inside it is still nice green colour...
Serve it with sauce...

SWEET POHA

Today is the second day of BM#17 group3. My theme is kid's tiffin...Poha as everyone knows is very good for health that too with some nuts...
INGREDIENTS:
Poha-1cup
Jaggery-1/2cup
Cardamom-powder-1tsp
Fried and cut almonds-2tbsp
Fresh cocnut-1/4cup

METHOD:
If the poha is thick variety ,please soak in water for 20 minutes.
Take the jaggery in a kadai,remove  the dirt and make it a slight thick syrup Add the poha,coconut cook for five minutes and add the cardamom powder and fried nuts.(We can add any nuts ex:cashews,pistaetc)
Healthy tiffin is ready for the kids when they return from the school...

EGGLESS BANANA MUFFINS

Today starts the second round of BM#17 Group3....My theme is kid's snack....So I thought of baking some muffins when I saw some ripen Bananas on the dining table....
INGREDIENTS:
Wheat flour-1cup
Ripen Bananas smashed -2
Sugar-1/2cup
Oil-1/4cup(Even less than that is ok)
Cinnamon Powder-1tsp
Vanilla essence-1tsp
Baking powder-1tsp
Baking soda-1/2tsp
Walnuts few
METHOD:
Mix the wheat flour with walnuts, baking powder,soda.
Take the smashed bananas,sugar,oil in a wide vessel and mix it well till the sugar dissolves.Add the cinnamon powder and the essence
Now mix both slowly and load it on a muffin tray and bake in the microwave for 30 minutes or till done in a convection mode...
Tasty Muffins are ready to serve to the kids..

ONION KULCHA

This is the second entry to Magic mingle#6 and also to Valli"s Indian cooking challenge... May.The main ingredient for magic mingle-coriander and ALL purpose flour.I made a slight change in valli's instead of aloo I used Onion
INGREDIENTS:
All purpose flour-1cup
Baking soda-1/2tsp
Baking powder-1tsp
Curd-1/4cup
Oil-2tbsp
Salt to taste

For stuffing:
Onion-2(cut finely)
Cumin seeds-1tsp
Amchur-1/2tsp
Chilly powder-1tsp
Coriander-1/2cup
Oil-3tsp
Anardhana seeds-1tsp
Salt to taste


METHOD:
Knead all the ingredients and make a soft dough.Allow it to stay for one hour.
Take a kadai add one tsp oil,add the cumin seeds,once it splutters,add the onion,fry till the raw smell disappears.
Add the coriander and  all the spices fry for one more minute.
Roll the dough in to a roti ,stuff with onion and cook it on a slow flame or you can bake it.
Lovely onion kulchas are ready!!!!It can be served with either some vegetables or with curd.

SEMIYA KESARI-Blog hop wednesday week-18

 Thanks to Radhika who is hosting this blog hop wednesdays regularly and ....This time I am paired with Follow foodie blogspot and the space has colourful recipes and healthy one....
I tried medhu vada with a slight variation and semiya kesari....
INGREDIENTS:
Semiya-1cup
Ghee-3tbsp
Sugar-1cup
Water-11/2cups
Cardamompowder-1tsp
Cashew nuts-2tsp

METHOD:
Fry the semiya ,cashews in ghee,add the water .I made this in microwave .So kept for five minutes for it to cook.To fry i kept in high for one minute
Add the sugar and cardamom powder and cook for three minutes.I did not add any colours...it is optional..

Aromatic kesari is ready!!!!!
INGREDIENTS
MEDHU VADA
Urad dhal-1cup
Pepper-1tsp
Green chilly-1
Curry leaves-few
Rice flour1tbsp
Salt to taste
Oil to fry
METHOD:
Soak the dhall for half an hour and grind it with all the ingredientswith out adding much water.
Now fry in hot oil by making a round shape on the palm..
Crispy vadas are ready...

MAGIC MINGLE#6-CORIANDER BALLS

I am very happy to take part in this magicmingle for the sixth time...This time the ingredients are All purpose flour and coriander...So I tried making fried balls
INGREDIENTS
Allpurpose flour(Maida)-1cup
Curd-1/4cup
Corn flour-2tbsp
Coriander leaves -1/2cup
Chilly powder or green chillies -2
Asafotida-1/4tsp
Hot oil-1tsp
Oil to fry
Sal to taste
Baking soda-1/2tsp


METHOD:
Mix soda,cornflour and maida.
Grind the chillies,coriander to a coarse paste
Mix oil,salt ,curd and knead it to a slightly watery dough
Drop in hot oil and fry it...
Crispy balls are ready..........

RADISH_CABBAGE SALAD-BM#17

THIS IS THE100th POST >Let me thank all the bloggers who have encouraged me to grow up to 100th postToday is the third  day of  Blogging-Summer salad and since Valli has started anew type of blogging for three days in a week,I have my next schedule on 17th,18th and 19th.
INGREDIENTS:
Shredded Cabbage-1cup
Radish sliced-1/2cup
Tomato sliced-1cup
Pepper powder-1/2tsp
Salt to taste
Olive oil-1tsp
Walnuts-2tsp

METHOD:
Take a wide mouthed vessel and mix the oil, pepper powder and salt.
Add all the cut vegetables,to the above spices
Garnish it with Walnuts!!!
Healthy Salad for weight watchers......

FRUIT SALAD_BM#17

Today is the second day of BM#17... I wanted to try some sweet salad with fruits.During summer after we reach home from work or somewhere else ,we hate to drink coffee,instead can eat cool salad .quenches thirst as well as good for health....
INGREDIENTS
Banana-1
Orange(sweet)-1
Papaya-1cup
Honey-2tsp
Walnuts-2tsp
Raisins-1tsp


METHOD:
Cut all the fruits in to small pieces and mix them all.Garnish with walnutsa dn raisins and cool it 
Wonderful salad  in Summer.....

SPROUT SALAD-BM#17

Thanks to Srivalli giving me an oppurtunity to take part in the blogging marathon after a very long gap.....The theme ,chosen by me is Summer salad
INGREDIENTS:
Green moong sprout(Boiled for two minutes)-1cup
Mango(kilimooku)-1
Carrot-sraped-1
Pepper powder-1/2tsp
Sal to taste
Chat masala-1/2tsp
Ground nuts-roasted and skin removed-2tsp

METHOD:
Mix all the ingredients and serve it.....It makes a tasty and healthy salad as Mangoes are available in Summer and this particular mango has a sweet cum sour taste..So goes very well with the salad
