Srilankan cuisine. Desert pudding

This time I am paired with Veena Krishna Kumar who gave me two interesting ingredients 
Jaggery and coconut milk
and I decided to do a quick pudding
Ingredients 
Coconut milk.21/2 cups
Jaggery.           1 cup
Gelatin.            3tbsp
Water.               1/2 cup
Vanilla essence1 tsp
Cashews for garnishing

Method:
Dissolve the jaggery in the coconut milk.Now dissolve the gelatin in warm water till it dissolves,add the essence.Now mix both and pour it in a mould
Just cool it .Garnish with some cashews
